Here is a quick recipe for you! My mom has been making these delicious energy balls lately. She found a recipe from Clean Food Crush, but altered it a bit.
Ingredients: 3 cups oats, 1 cup peanut butter, 2/3 cup honey, 1/2 tbsp. vanilla extract (or more!), 1/2 cup or so of dark chocolate chips, 1/2 to 1 cup unsalted sunflower seeds.
You can also use chopped walnuts, almonds, pistachios, coconut, craisins, pecans, peanuts, etc. To add extra nutrition, add some flax seed or chia seeds.
Directions: Mix all ingredients together until well combined, and place on a cookie sheet and freeze for an hour or so. Then, just place them in a container and keep in the fridge for up to a week (good luck keeping them around that long)!
