Street tacos are one of my absolute favorite foods!  They are so fresh and tasty, and you can make them your own.  I almost always eat steak tacos, but chicken is good too!  I wanted to share what I used for my street tacos last week.

Corn Tortillas
Flank or Skirt Steak (your choice of any)
Pico de Gallo
Organic Shredded Mild Cheddar Cheese
Fresh Cilantro

You can marinate your steak however you would like.  I didn’t have time to marinate it this time, so I just seasoned the flank really well with garlic powder and onion powder.  Grill the steak until a nice medium, or to your liking.

Once the steak is cooked, remove it from the grill to rest, and warm your corn tortillas until they have soft grill marks.  Warming them helps add some yummy flavor, and it helps the tortilla stay together when you eat it (corn tortillas are very fragile).  I sliced my steak while the tortillas were finishing on the grill.

When the steak and tortillas are ready, it’s time to assemble!  While assembling, I like to make sure the lime juice gets onto the tortilla to really lock in that lime flavor, and I have found that the moisture on the tortilla helps to keep it from breaking too.

If you have time, I highly recommend pickled red onions too- you can’t go wrong with those as a topping!
