It’s been awhile since I’ve posted, so I wanted to do a recap of the past few days!
Last Wednesday I made steak fajita’s for dinner. I didn’t feel like grilling out in the cold so I just pan-fried the steak- I used sirloin that we had in the freezer. I fried up yellow and green peppers and onions and seasoned the steak and veggies with cumin, chili powder, garlic powder, cayenne, and onion powder. I served mine on a lightly pan-fried 100% whole wheat tortilla, with a little sour cream and cheddar cheese!
Thursday night was designer purse bingo night at a local golf course restaurant, and I am happy to report that I won the second game! I chose this pink/red Coach purse- $40 to play bingo beats the number on the price tag! I enjoyed a tasty grilled chicken caesar salad for dinner, but failed to take a picture- I was too busy dobbing numbers! When I got home after bingo, I received a package in the mail that made my day. Tommy’s Mom sent me a surprise package with a thinking of you card and the book “The Shack.” My family and I recently had a couple of losses, so this package made my day and I can’t wait to read this book.
I don’t have any pictures from the weekend- we were up north for Tommy’s birthday and I failed to take pictures as I had my phone away most of the weekend- which is OK! Friday night we enjoyed pizza from Sammy’s, we went to Lucky’s 13 for lunch Saturday where I had a Cajun chicken sandwich, and then I also had a grilled chicken sandwich at dinner Saturday night while we were out listening to a band. Unhealthy weekend for the most part, but it was a blast and it was a special occasion!
When we got back into town Sunday, I headed straight to Target for groceries! My trip included:

Not everything I purchase is healthy and you probably notice that some items are organic, some are not. I purchase organic when and where I can, and when the price is right. I spend a lot on organic chicken and ground beef, but struggle to spend the money on organic steak because of the price and I don’t eat it too often so I’m not worried about it. I eat a lot of chicken and ground beef, so I do make sure to buy organic of those meats. I do my best to always buy organic fruits and vegetables.
The reason I have four cans of cream of chicken soup and a box of ritz crackers is because I am making cheddar chicken on Valentine’s day, which we haven’t had since this time last year- so it will be a yummy treat! The cheez-its are a weakness of both mine and Tommy’s and I can’t take ALL of the treats away from him all the time, so I bought a few boxes to have in the house. The cheddar jack one’s are pretty much already gone- we have no will power with cheez-its…does anyone?
Sunday night after grocery shopping I cooked up some meatloaf, mashed potatoes, and corn. It isn’t pretty, but those meals are often the best ones, especially when on paper plates!
Tonight’s dinner was light and healthy, yet filling. I had grilled flank steak, radishes, and salad.
The flank steak was marinated with balsamic vinegar, olive oil, fresh chopped garlic, dried rosemary, and fresh chopped basil (recipe adapted from Skinny Taste). I skipped on the sage and salt. The steak was grilled- there is no better way to prepare steak.
The radishes were just sliced and sautéed with avocado oil, garlic powder, and black pepper.
My salad consisted of spinach and arugula, raw cashews, avocado, apple, and raspberry vinaigrette.
Now it is time to watch the Olympics a bit longer and then hit the pillow!
