I love easy dinner nights!  I just recently tried the Evol Truffle Parmesan Mac N’ Cheese, and it was delicious.  I instantly knew that I wanted to fluff it up next time to make it more filling and add nutrients.  I decided to turn it into a full meal by adding chicken and vegetables.

I chose broccoli and carrots for my veggies, as that is what I had on hand.  I seasoned them with avocado oil, California garlic pepper, garlic powder, and onion powder.  Just grill until your liking!

I used boneless skinless (antibiotic free, vegetarian fed) chicken breasts for the protein, which was tossed in avocado oil, California garlic pepper, garlic powder, and onion powder – same as the veggies.  I of course grilled the chicken!

While the chicken and vegetables are finishing up, cook the Truffle Parmesan Mac N’ Cheese.  I don’t use the microwave too often, and when I do cook something that way, I transfer the food into a glass bowl- I never cook food in the microwave or oven with the plastic container it comes in.

If you like macaroni and cheese, I highly recommend this Evol kind.  It is so tasty and a perfect portion size.
