While I was grocery shopping today, I walked past tortellini in the frozen food section and couldn’t resist. Growing up, one of my favorite meals was when my parents would make deep fried tortellini. They would serve it with alfredo and cheese sauce for dipping!
My version of their “deep fried” tortellini is a smidge more healthy! I pan-fry mine in avocado oil on medium-high heat straight from the freezer until they are nice and crispy. Serve with alfredo sauce and voila! If you’ve never had crispy tortellini, do yourself a favor and give it a try. You won’t be disappointed.
I had a simple salad with it which consisted of spring mix, sunflower seeds, grated Parmesan cheese, and a new to me dressing- lemon basil vinaigrette. The dressing was pretty good and complimented the tortellini really well.
