Last night was one of those nights where I wasn’t sure what I wanted to eat, nothing sounded good, yet I wanted to be healthy. I ended up stopping at the grocery store on my way home from work to grab a bag of stir-fry. I got the Teriyaki Bok Choy Saute Kit.
I had already taken out chicken, so I sliced one boneless, skinless chicken breast up and pan-fried it in avocado oil with pink Himalayan salt, black pepper, and garlic powder. Once the chicken was cooked I grabbed a new pan with a little more avocado oil and sautéed the veggies with the cooked chicken until done. The sauce that comes with the kit gets added towards the end. The stir-fry shrinks down a lot so I had bulked it up with a frozen medley I had of broccoli, cauliflower, and carrots.
A crispy baked potato was my side, and then I also had an easy mac cup because I still felt hungry.
I had purchased two bags of stir-fry so I cooked the other one up tonight with chicken again, but added my own teriyaki sauce to add even more flavor. I mixed it with a good ol’ box of grass-fed, organic macaroni and cheese (which I also add extra shredded cheese to, as well as garlic salt or garlic powder), which was delicious and completely hit the spot!
