Last night was one of those nights where I wasn’t sure what I wanted to eat, nothing sounded good, yet I wanted to be healthy.  I ended up stopping at the grocery store on my way home from work to grab a bag of stir-fry.  I got the Teriyaki Bok Choy Saute Kit.

Once the chicken was cooked I grabbed a new pan with a little more avocado oil and sautéed the veggies with the cooked chicken until done.  The sauce that comes with the kit gets added towards the end.  The stir-fry shrinks down a lot so I had bulked it up with a frozen medley I had of broccoli, cauliflower, and carrots.
