Vegetarian Lo Mein

Vegetarian lo mein is a favorite of mine when I go out for Chinese, but it can get expensive. Here is a cost-friendly version you can make at home.

I was craving lo mein the other night so decided to make some at home instead of going out and spending a ton of money on Chinese food (which I love doing).  I whipped this together with ingredients I had on hand and it turned out pretty good and definitely hit the spot!  

Vegetarian Lo Mein Ingredients

  • Spaghetti Noodles, Cooked
  • Mushrooms, Sliced
  • Jalapeños, Sliced
  • Green Onions, Cut in Large Pieces
  • Onion, Sliced
  • Coconut Aminos
  • Teriyaki Sauce
  • Fresh Garlic Cloves, Chopped
  • Hoisin Sauce
  • Rice Vinegar
  • Pink Himalayan Salt
  • Olive Oil Cooking Spray

You can use any vegetables and add in any meat you want!  Some of my other favorite vegetarian lo mein add-ins include broccoli, zucchini, bell peppers, pineapple, cilantro, peanuts, peas, carrots, and celery!  Ginger would have also been added to this but I didn’t have any on hand.

Once the veggies are chopped and your noodles are boiled and drained, heat a pan on medium-high heat with olive oil cooking spray.  Once the pan is hot, add everything right to it!  Cook until the veggies are done to your liking. 

Unfortunately I don’t measure much of anything when I cook- I just add seasonings and sauces to taste.  Start with small amounts.  You can always add more but you can’t take away!  I probably only used two to three tablespoons of the rice vinegar and hoisin sauce.  I went heavier on the coconut aminos and teriyaki sauce and used maybe four garlic cloves (I love garlic).

To accompany the lo mein I air fried vegetable egg rolls and served them with a side of sweet chili sauce for dipping! 

Extra Flavor

For a small hint of sweet, sprinkle in brown sugar, and for extra spice, sprinkle in red pepper flakes!
