Meatless tacos with sautéed peppers and onions!

Eating vegetarian has been a fun challenge for me and this was the first meal that I ate on repeat the first couple days of my new lifestyle!  Tommy wanted tacos the first night we planned to cook dinner in our new home so that is what we had!  

I made beef for him and sautéed peppers and onions for me which I also seasoned with my own taco seasoning.  We like hard and soft shells together.  I loaded mine with the peppers and onions, sour cream, queso, tomatoes, lettuce, red onion, cheese, salsa, and green tabasco sauce.  They were so good that I ate them for probably two or three more meals and I never eat leftovers!

My Why for Choosing to Become Vegetarian

The first home-cooked meal I ate on my new lifestyle as a vegetarian were meatless tacos with peppers and onions in place of beef!

Another good way to eat tacos?  Pan-fried to crisp it up!

I can honestly say that I haven’t missed meat yet, which I find a bit odd, but I’m happy about that and I’m feeling great about my decision 💚
