Here is a delicious and filling dinner idea! My vegetarian meals seem pretty random but they work and are often pretty tasty.
The salad consisted of spring mix, carrots, sautéed teriyaki snow peas, wonton strips, and one of my favorite dressings which is a mix of avocado oil, sesame seeds, rice vinegar, teriyaki sauce, peanut sauce, sesame oil, and red pepper flakes. My co-worker introduced this dressing to me a few months ago and I’ve been loving it ever since! I like this dressing with the salad kits from the store too > Asian Chopped Salad
I always have broccoli in the freezer so I steamed that in a pan with a little water and then pan-fried it with a little avocado oil and brown sugar bourbon seasoning.
Unfortunately once in a while I use the microwave! When I want a quick cook on my potatoes I poke holes in them with a fork, wrap in a damp paper towel, and microwave until soft. I top my sweet potatoes with a little butter, cinnamon, and sugar!
